Brazil unveils 10 summer appetizers for every seasonal gathering
A new list of summer appetizers aims to make warm-weather entertaining simpler and more flavorful. The selections focus on dishes that showcase the season’s bright colors and fresh ingredients.
The recipes include herby dips, crisp salads, and light finger foods. The collection was chosen based on two main ideas: each dish must reflect the vibrant look of summer and be packed with fresh seasonal flavor. Easy preparation and make-ahead options were also priorities.
The appetizers are designed for different types of gatherings, from backyard dinner parties to casual happy hours. The goal is to offer dishes that feel effortless, seasonal, and special without requiring complicated steps.
One recipe features tartines with heirloom tomato, blue cheese, and golden beets. The combination includes crisp bread, juicy tomatoes, creamy cheese, sweet roasted beets, and crunchy pepitas. Another option is a whole stalk or bulb salad, made with sturdy vegetables that stay fresh after being dressed.
A zucchini ribbon salad is also included. The zucchini is shaved thin and mixed with fresh herbs, cucumber, goat cheese, and a lemony dressing. A rainbow summer beet salad combines beets and tomatoes with olive oil, lime, and dukkah.
Hummus toast with tomatoes, feta, and za’atar is listed as a quick option that works for lunch or as an appetizer. A roasted red pepper caprese pasta salad mixes pasta with sun-dried tomatoes and traditional caprese ingredients.
For a no-cook option, spring pea gazpacho is blended and chilled before serving. Bruschetta with slow-roasted tomatoes and ricotta is another choice, with sweet tomatoes and creamy cheese on toasted sourdough.
Artichoke and spring pea crostini can be made in about 15 minutes by broiling baguette slices and blending pesto in a food processor. Leftover pea pesto can be used with crudités or on sandwiches. A white bean and radicchio salad is also recommended to start a meal or serve alongside grilled meat or fish.
